1 cup yellow lentils (toor dal)
1/2 cup split yellow gram (moong dal)
2 tomatoes, finely chopped
1 onion, finely chopped
2 green chilies, slit
1-inch piece of ginger, grated
4 cloves of garlic, minced
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons ghee (clarified butter) or oil

Rinse the lentils thoroughly and soak them in water for 30 minutes. Pressure cook the lentils with chopped tomatoes, green chilies, grated ginger, and minced garlic until soft and mushy. Heat ghee or oil in a pan. Add cumin seeds and mustard seeds. Let them splutter. Add chopped onions and saut├й until golden brown. Stir in turmeric powder, red chili powder, and garam masala. Cook for a minute. Pour the cooked lentils into the pan and mix well. Add water if needed to adjust the consistency. Simmer the dal for a few minutes until flavors blend together. Garnish with fresh coriander leaves before serving.
