Desi Style Pasta: A Quick and Tasty Indian Twist

Ingredients:

  • 250 grams pasta (any variety of your choice)
  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 green bell pepper, diced
  • 1 carrot, grated
  • 1/2 cup green peas (fresh or frozen)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Cook the pasta according to the instructions on the package until al dente. Drain and set aside.
  2. Heat oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in minced garlic, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
  5. Add the diced bell pepper, grated carrot, and green peas. Cook for 3-4 minutes until the vegetables are slightly tender.
  6. Pour in the tomato puree and mix well. Cook for another 3-4 minutes until the raw smell of the tomatoes disappears.
  7. Add turmeric powder, coriander powder, garam masala, and salt. Mix the spices well with the vegetables.
  8. Toss in the cooked pasta and gently stir until the pasta is evenly coated with the spice mixture. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  9. Remove from heat and garnish with fresh coriander leaves.
