Litti Chokha is a traditional dish from the Bihar region of India, consisting of roasted wheat balls filled with spicy chickpea flour (sattu) mixture, served with a side of smoky mashed vegetables called chokha. Let's explore how to prepare this flavorful and wholesome dish!
Ingredients for Litti:
- 2 cups whole wheat flour (atta)
- 1 cup sattu (roasted chickpea flour)
- 2 tablespoons mustard oil
- 1 teaspoon ajwain (carom seeds)
- 1 teaspoon kalonji (nigella seeds)
- 1 teaspoon salt (or to taste)
- Water (as needed)
Ingredients for Chokha :
- 4 medium-sized potatoes
- 2 tomatoes, chopped
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons mustard oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions for Litti :
- In a mixing bowl, combine the whole wheat flour, ajwain, kalonji, salt, and mustard oil.
- Add water gradually and knead into a firm dough. Cover and let it rest for 30 minutes.
- Meanwhile, prepare the stuffing by mixing sattu, chopped onions, green chilies, mustard oil, and salt in a bowl.
- Divide the dough into small lemon-sized balls. Flatten each ball and place a spoonful of the stuffing mixture in the center.
- Seal the edges and shape them into round balls again.
- Preheat the oven to 180°C (350°F). Place the littis on a baking tray and bake for 30-35 minutes or until golden brown, turning them occasionally.
- Once done, remove from the oven and brush with ghee for added flavor.
Instructions for Chokha:
- Boil the potatoes until tender. Peel and mash them in a bowl.
- In a pan, heat mustard oil and add minced garlic and grated ginger. Sauté until fragrant.
- Add chopped onions and green chilies. Sauté until onions turn golden brown.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft and mushy.
- Add the mashed potatoes to the pan and mix well with the tomato mixture.
- Remove from heat and garnish with fresh coriander leaves.
