Crispy Onion Bhaji Recipe Deshi Style: A Flavorful Indian Food

Onion bhajis, also known as onion pakoras, are a popular Indian snack enjoyed for their crispy texture and delicious flavors. Ingredients:
2 large onions, thinly sliced
1 cup gram flour (besan)
2 tablespoons rice flour
1 teaspoon cumin seeds
1 teaspoon coriander seeds, crushed
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon baking soda
Salt to taste
Water (as needed)
Vegetable oil (for deep frying)
Instructions:
In a mixing bowl, combine the gram flour, rice flour, cumin seeds, crushed coriander seeds, turmeric powder, red chili powder, baking soda, and salt. Mix well.
Gradually add water to the dry ingredients, whisking continuously, until you achieve a smooth, thick batter. The consistency should be similar to pancake batter.
Add the thinly sliced onions to the batter and mix until all the onion slices are coated evenly.
Heat vegetable oil in a deep pan or kadhai over medium heat. The oil should be hot enough to fry the bhajis but not smoking.
Take a small portion of the onion and batter mixture and drop it gently into the hot oil. Repeat this process to make multiple bhajis, but avoid overcrowding the pan.
Fry the bhajis until they turn golden brown and crispy, flipping them occasionally to ensure even frying. This usually takes about 3-4 minutes per batch.
Once fried, remove the bhajis from the oil using a slotted spoon and drain the excess oil on a paper towel.
Repeat the frying process with the remaining onion and batter mixture until all the bhajis are cooked.
Serve the hot and crispy onion bhajis immediately with mint chutney, tamarind chutney, or tomato ketchup.
